Recipe Peanut Chicken Zucchini Noodles 🥜 🔥
I’m a HUGE Thai food lover and this turned out great. 10/10!

2 Tbsp sesame oil
2 tsp minced or chopped garlic
1 cup shredded carrots
1 cup thinly sliced cabbage (I use purple)
1 large bell pepper, thinly sliced (I use red)
3 large zucchini, spiralized into noodles (I used two 12 oz frozen bags of zucchini noodles cooked stove top)
2 large chicken breasts, cooked & shredded (about 2–3 cups I’ll link my instant pot recipe in bio that I used)
ALL PURPOSE PEANUT SAUCE 🔥 I used a difference sauce then original recipe- with less sugar.

2 cloves garlic (minced)
1 1/2 tsp ginger (minced or grated)
1/3 cup peanut butter
2 tsp soy sauce
2 tsp fish sauce
1/2 tsp toasted sesame oil
2-3 Tbsp hot water (to your desired consistency)
OPTIONAL ADD-INS
1 Tbsp lime juice
1 tsp chili oil
1-2 Tbsp Sriracha
Topped off with sesame seeds, green onion, peanuts, and fresh lime 🔥
