Pistachio Crusted Salmon 🍣

Ingredients:

– 1 1/2 pound Salmon (we used 2)
– 1 1/2 tbsp dijon mustard
– 2 cloves crushed garlic
– 1 1/4 tbsp olive oil
– 1.5 tbs lemon juice
– 1.5 tsp honey or maple
– 1/3 cup finely chopped pistachios
– Salt and pepper to taste

Instructions:

1. Preheat the oven 375 F
2. Pat the salmon dry and season with salt and pepper
3. Mix together the mustard, olive oil, lemon juice honey and garlic and brush over the Salmon fillet
4. For thicker pieces slice 3/4 of the way through to allow marination completely coat the fish
5. Top with the chopped pistachios and bake for 15 min (depending on the thickness)
6. To check if it’s done- cut though a piece of salmon. If its flakey and pulls apart with no liquids inside, then it’s done!
