I love lemons! I wanted to include a light, lemony tasting dessert for our guests and these lemon squares fit the bill. They were a hit! One bite and our guests were talking about how delicious and lemony they tasted. They practically melted in your mouth. You must try this recipe if you love lemons! 🍋😋💛
6 tbsp butter
1/4 cup sugar
1 cup flour
3/4 cup sugar
1/4 tsp salt
2 tbsp flour
1/4 tsp finely shredded lemon peel
3 tbsp fresh lemon juice
1/4 tsp baking powder
1. Greasing 8x8x2-inch baking pan. Beat butter for 30 seconds; add the 1/4 cup sugar and 1/4 tsp salt, beating until fluffy. Stir in the 1 cup flour. Pat dough onto bottom of pan. Bake in 350° oven for 15 minutes.
2. Meanwhile, beat eggs; add remaining 3/4 cup of sugar, 2 tbsp flour, lemon peel, lemon juice, and baking powder. Beat 3 minutes or till slightly thickened. Pour over baked layer. Bake in a 350° oven 25 to 30 minutes longer or till light golden brown around edges and center is set. Cool.
3. Sift powdered sugar over top. Cut into squares. Makes 16.
