Everyone loves simple recipes. There is nothing better than having a healthy dinner in 15 minutes flat. This Avocado Chicken Waldorf Salad is one of my favorite warmer weather dinners. Super simple, super refreshing, and can be made even easier by using store bought rotisserie chicken, or leftover chicken.
-2 shredded or cubed chicken breasts (about 8 oz)
-1/2 an avocado mashed
-1/4 cup Greek yogurt
-1 tsp honey mustard
-1/4 cup chopped apple
-1/4 cup sliced grapes
-1/4 cup chopped onion
-1/4 cup chopped celery
-lemon juice and zest
-salt and pepper
-greens of choice, @simplemills almond flour crackers, and cucumber (to serve)
Mix together, mashed avocado, yogurt, lemon zest/juice, herbs, seasonings, and mustard together. Set aside.
Toss together the rest of the salad ingredients, then pour over the dressing. Toss to coat. Serve on a bed of greens, with crackers to dip.
