Easy, Nutritious, Tex Mex Inspiration! Tex Mex gets a bad rap for being unhealthy – and rightfully so if it’s fried and drowning in queso. But you can still enjoy Tex Mex flavors and get in an abundance of nutrients. Below is one of my favorite busy night recipes. Top this chicken with loads of veggies and avocados on a tortilla of choice and you have a well balanced meal.

Slow Cooker Chicken Tacos
3 chicken breasts
3 bell peppers, variety of color, sliced
1 onion, sliced
2 packets taco seasoning

Layer veggies on bottom of large crockpot, followed by the chicken. Sprinkle seasoning on top. Cook on low for 8 hours or high for 4 hours. Shred and enjoy!
