A quick Minestrone for lunch, was craving something rich and tomato-y (is that a word?!) so this one hit the spot!
I do make a raw version of this but today has turned chilly so cooked it is!
Serves 4.
INGREDIENTS:
1 clove garlic chopped
1 chilli, chopped
1 onion, sliced
1 carrot, diced
1 zucchini, diced
handful spinach
1 can cannelloni beans, drained, rinsed
1 can crushed tomatoes & / OR 1 cup fresh chopped tomatoes
1 jar rich pasta sauce
2C water
2T tomato paste
4T miso paste
1T olive oil
handful parsley, chopped
handful basil, chopped
s&p to taste
Optional to serve: Cashew Sour Cream and Sauerkraut
METHOD:
Heat olive oil in large frypan, and fry off onion until golden, add garlic and chilli, fry for 1 minute. Add carrot and zucchini, stir and place a lid and cook until soft over medium heat.
Add in cannelloni beans, and tomato paste, stir for 1 minute.
Add tomatoes, pasta sauce, miso paste and half the water and stir to combine, allow to simmer for 5 minutes. Add more water if needed.
Stir in spinach, basil, parsley, s&p over low heat. Adjust to taste & serve with cashew sour cream and sauerkraut.
